In a large mixing bowl, add the ostrich mince, red onion, feta cheese, mint, basil, parsley, coriander, cumin, salt, pepper and the beaten egg. Mix all the ingredients together with your hands.
Roll the mince mixture into 2 patty-sized balls and flatten slightly between your palms.
Place the patties onto a baking tray. Cover the baking tray with clingwrap and refrigerate for 30 minutes.
Set up your Russell Hobbs Air Fryer & Grill to the Grill Mode by placing the main heating body with the element facing up.
Place the Non-stick Grill Plate on top of the element.
Plug your Russell Hobbs Air Fryer & Grill into the wall socket and the machine will beep. Press the standby button on the touch screen control panel and the Russell Hobbs Air Fryer & Grill will switch on. Set the temperature to 150°C by decreasing the temperature using the “-“ button on the touch screen control panel. Press the Start button and the cooking process will begin.
Remove your ostrich patties from the fridge and transfer to your Non-stick Grill Plate. Grill for 4 minutes on each side.
Still using your Russell Hobbs Air Fryer & Grill on the Grill Mode, set the temperature to 120°C; decreasing the temperature using the “-“ button on and the touch screen control panel. Press the Start button and the cooking process will begin.
Heat the oil and butter on the Non-stick Grill Plate. Allow the butter to heat and foam. The colour will change from yellow to a rich golden-brown colour.
Add the lemon juice, onion, rosemary and sugar.
Stir the mixture with your silicone spatula and allow to cook for 8 minutes, until the mixture is well caramelised.
Season the caramelised onions with salt and pepper and set aside.
Slice the burger buns in half using a bread knife and place each bun on a plate.
Spread 1 tbsp of mayonnaise on each of the bottom bases.
Place lettuce, tomato, red onion, ostrich patties and blue cheese on top.
Cover your burger with the other half of the bun.
Plate, serve & enjoy!
