Savoury Rice

  • 1 tbsp butter
  • 1 Onion chopped
  • 4 tbsp chives
  • 3-4 slices bacon chopped
  • 3 cups chicken stock (very hot)
  • ¼ cup pine nuts
  • 2 cups rice
  • Salt and pepper to taste
  1. Melt the butter in a bowl for 1 minute
  2. Add the onion, chives, bacon and pine nuts, heat for 10 minutes on high heat.
  3. Add rice and stock, stir.
  4. Cook on high power, covered 25 mins stirring every 10 minutes.
  5. Remove and season
  6. Leave to stand for 5 minutes.
