Broccoli, garlic & potato soup
Ingredients
- 1 head of garlic cut in half
- 1 onion chopped
- 1 head of broccoli broken into florets
- 1 medium potato
- 1 tsp salt
- 750 ml vegetable stock
- Salt and pepper
- Cream to garnish
Instructions
- Place the head of garlic in the Air fryer and cook for 15 minutes at 180 °c
- Remove and all to cool
- Place the onion, broccoli, and potato in the air fryer and cook for 15 minutes at 180°c
- Place all ingredients in a jug except for the cream and blend until smooth
- Garnish with cream and serve hot with crusty bread
