Broccoli, garlic & potato soup

  • 1 head of garlic cut in half
  • 1 onion chopped
  • 1 head of broccoli broken into florets
  • 1 medium potato
  • 1 tsp salt
  • 750 ml vegetable stock
  • Salt and pepper
  • Cream to garnish


  • Place the head of garlic in the Air fryer and cook for 15 minutes at 180 °c
  • Remove and all to cool
  • Place the onion, broccoli, and potato in the air fryer and cook for 15 minutes at 180°c
  • Place all ingredients in a jug except for the cream and blend until smooth
  • Garnish with cream and serve hot with crusty bread
