Malva Pudding

  • 65 ml margarine
  • 250 ml sugar
  • 1 tsp apricot jam
  • 1 egg
  • 250 ml self-raising flour
  • 5 ml bicarbonate of soda
  • 250 ml milk
  • 15 ml vinegar
  • 1 can evaporated milk
  • 100 ml sugar
  • 125 ml water
  1. Cream margarine and sugar. Add jam. Mix well
  2. Whisk egg into mixture.
  3. Fold in self-raising flour.
  4. Dissolve bicarbonate of soda in milk before adding.
  5. Add vinegar and mix well.
  6. Pour into large microwave dish and microwave for 10 – 12 minutes on high.
  7. Sauce: Dissolve sugar in boiling water and add evaporated milk.
  8. Pour over hot pudding.
  9. Serve with custard.
