Currant Bread
- 500 g wholemeal flour
- 150 g butter (softened)
- 1 tbsp baking powder
- ½ tsp salt
- 150 g sugar
- 150 g currants
- 50 g mixed fruit peel
- 2 eggs (medium)
- 2 tbsp milk
- Preheat the oven to 180º C
- Place the flour in the bowl, add the softened butter and mix on speed MIN.
- When the butter and flour start to blend, add the sugar, salt, currants, fruit peel and baking powder.
- Leave it mixing while you beat the eggs and milk together and then add the egg/milk mixture to the bowl.
- Increase the speed to 1 and mix until all the ingredients are combined.
- Put into a greased loaf tin and bake for 30-35 minutes or until golden brown.
- Turn onto a wire rack and allow to cool before slicing.
- Serve toasted with butter.
