  • 500 g wholemeal flour
  • 150 g butter softened
  • 1 tbsp baking powder
  • ½ tsp salt
  • 150 g sugar
  • 150 g currants
  • 50 g mixed fruit peel
  • 2 eggs medium
  • 2 tbsp milk


  • Preheat the oven to 180º C
  • Place the flour in the bowl, add the softened butter and mix on speed MIN.
  • When the butter and flour start to blend, add the sugar, salt, currants, fruit peel and baking powder.
  • Leave it mixing while you beat the eggs and milk together and then add the egg/milk mixture to the bowl.
  • Increase the speed to 1 and mix until all the ingredients are combined.
  • Put into a greased loaf tin and bake for 30-35 minutes or until golden brown.
  • Turn onto a wire rack and allow to cool before slicing.
  • Serve toasted with butter.
